Guide for freezing and freighting

(a)

After landing fish, wrap in damp cloth or newspaper making sure the preferred show side is upper most when laid on a flat surface. Keep out of sun.

(b)

Prior to freezing, remove from cloth or newspaper and wrap in a soft plastic wrap avoiding wrinkles or folds in the wrapping on the show side, taking care to cover fins and tail. Place in freezer – make sure the fish is frozen solid before dispatch.

(c)

When ready to dispatch, wrap in approximately five layers of newspaper, note on outside of package "perishable goods".
